Ingredients
- 2 small-medium sweet potatoes
- 1 ripe banana (riper the better)
- 60g Cocoa powder
- 70g dates
- 20g oats
- 1 TSP ground cinnamon
- 75ml Soya Milk
- 70ml Aquafaba (optional, double the soya milk if not using)
Instructions
- Cook sweet potatoes for around 40 mins, until soft
- Soak the dates in warm water while the potatoes cook.
- Allow the potatoes to cool once cooked.
- Pit the dates, chop slightly
- Remove skins from potatoes and banana.
- Mash the potato and banana in a bowl
- Transfer to a food processor
- Add in all other ingredients.
- Combine well.
- Transfer to an ovenproof dish
- Bake for 40 mins
- Allow to cool, then chill for 20-30 mins before cutting.
- Cut into desired sized pieces.
